Ingredients

  1. Preheat oven to 275°
  2. Combine all ingredients, except the nibs and coconut flakes, into a large mixing bowl and stir until everything is evenly coated with the oil and maple syrup.
  3. Line one large or two smaller baking sheet(s) with parchment paper.
  4. Spread granola mixture on top of the baking sheets and bake for 25-30 minutes,
  5. stiring every 7-10 minutes.
  6. Once done, combine the granola with the coconut flakes and cacao nibs and stir until everything has mixed together.
  7. Store in an airtight container up to 2-3 weeks. Enjoy over probiotic rich yogurt and berries, pack it during traveling or top on a baked sweet potato for a nice crunch.
