Pecan Chicken over Beet Noodles and Roasted Vegetables

Ingredients
Instructions
  1. Preheat oven to 375 degrees. Toss chopped golden beet, red onion and broccoli florets with 2 T. evoo, salt and pepper.
  2. Bake vegetables for 20-25 minutes until roasted, stirring occasionally.
  3. While the vegetables are roasting, spiralize the 2 golden beets and keep in a small bowl to the side.
  4. Place chicken breasts on a baking sheet lined with foil. Spray. Place chicken on foil then season with salt followed by ½ T. of barbeque sauce of choice.
  5. Top with evenly distributed pecans.
  6. Bake chicken at 375 for ~12-15 minutes depending on thickness of the chicken.
  7. Preheat large saute pan to medium high heat. Add coconut oil followed by the spiralized beets.
  8. Season with salt and pepper. Heat through for ~3-4 minutes.
  9. Enjoy your perfectly spiralized golden beet noodles, roasted vegetables and pecan chicken breast.
