- 1/2 Green cabbage Large head, core removed, shaved/julienned
- 2 Apples Local if possible, sliced thin or julienned
- 1 Yellow onion Small, shaved/julienned
- 2 T Apple Cider Vinegar Unfiltered
- 1/4 cup Extra virgin olive oil
- 2 T Honey Local
- 1 T Dijon mustard Stone ground
- 1 tsp Kosher Salt
- 1 T Dill Fresh, minced (1 tsp. freeze dried dill as substitute)

- Add all ingredients into a large mixing bowl while making sure the cabbage, apples and onions are evenly coated.
- Place slaw in large airtight container and allow to marinate for at least 20-30 minutes prior to serving.
The Purpose: increase overall plant food intake, feed healthy bacteria and microbiome within the gut, regulate free radical oxidation, utilize fats to increase fat soluble vitamin absorption, ability of vegetables to taste awesome, preparation of recipe that can be utilized frequently throughout the week.
