- 2 tbsp Extra virgin olive oil
- 3 large Zucchini sliced
- 2 Yellow onions julienned
- 1/5 tsp Salt of choice
- 1/5 tsp Garlic powder
- 1 lb Apple Chicken Sausage brand you trust and value
- 4 servings Maple Roasted Beets (see recipe)

- Preheat oven to 375°F
- Mix zucchini, onions, olive oil and seasonings into a mixing bowl and toss until vegetables are coated.
- Place vegetables on prepared baking sheet and roast for 20-25 minutes until done, stirring on occasion.
- While vegetables are roasting, begin to cook chicken sausage and rest until done.
- Compose your plate with roasted vegetables then top with chicken sausage.
- Reheat roasted beets and add to your meal. Enjoy!
