Ingredients
- 3 cups Pecans unsalted, lightly roasted or toasted
- 1/2 cup Coconut milk full fat, canned
- 1/2 cups Unsweetened milk of choice (e.g. macadamia milk, almond milk)
- 1 tsp Pure vanilla extract
- 1/8th tsp Ground cardamom

Instructions
- Add all ingredients to heavy duty blender.
- The liquid should be approximately 1-2 inches above the pecan line. If you
- like a more liquid texture add a more unsweetened milk (you may have to
- test this recipe 2 times to get it to the texture of your preference).
- Puree ingredients until smooth, 30-45 seconds. Be sure to avoid over mixing
- to prevent pecans turning into butter-like texture.
- Keep “yogurt” in airtight container overnight to ensure it has time to settle.
- Enjoy plain or with cacao nibs and fresh berries.
