- 3 Golden beets skin removed, separated (2 spiralized, 1 chopped)
- 1 Red onion julienned
- 2 Broccoli heads chopped into florets
- 2 tblspn Extra virgin olive oil
- ¼ tsp each Salt and pepper
- 4 - 6 oz Chicken breast thin cut
- ½ tsp Salt
- 2 tblspn Barbeque sauce
- 1/3 cup Pecans crushed into breadsize crumb pieces
- 2 tblspns Coconut oil
- additional salt and pepper

- Preheat oven to 375 degrees. Toss chopped golden beet, red onion and broccoli florets with 2 T. evoo, salt and pepper.
- Bake vegetables for 20-25 minutes until roasted, stirring occasionally.
- While the vegetables are roasting, spiralize the 2 golden beets and keep in a small bowl to the side.
- Place chicken breasts on a baking sheet lined with foil. Spray. Place chicken on foil then season with salt followed by ½ T. of barbeque sauce of choice.
- Top with evenly distributed pecans.
- Bake chicken at 375 for ~12-15 minutes depending on thickness of the chicken.
- Preheat large saute pan to medium high heat. Add coconut oil followed by the spiralized beets.
- Season with salt and pepper. Heat through for ~3-4 minutes.
- Enjoy your perfectly spiralized golden beet noodles, roasted vegetables and pecan chicken breast.
